Wine-making process
Grapes 100% Aglianico del Vulture. Harvesting is the fundamental part of the production process of Aglianico del Vulture wine and it takes place during two/three weeks in October. Wine grapes are harvested when the berries reach the right level of ripeness. Bunches are harvested during the coolest hours of the day and with special scissors, and are transferred into crusher-stemmer machines, which separate the fruit from the stalks of each bunch and crush them in order to obtain the must. Vinification takes place by maceration for about 10 days, followed by vinification at controlled temperature and maturation in natural volcanic barrels. Maturation in oak barrels for 12 months follows.
